First round of Recipes...

Here's my recipe for beef stroganoff-submitted by Mel
Please respond with your "beef" recipes.
1 lb stir fry beef or similar 10.5 oz water 1-2 beef bouillon cubes 2 tbsp ketchup 1 clove garlic 1 tsp salt 3 tbsp flour 1 cup sour cream 1 can mushrooms 1 small onion chopped

Cook meat. Stir mushrooms and onion in 2 tbsp of butter until tender. Add water and beef bouillon. Set aside 1/3 cup of the bouillon. Into the main mix add ketchup and garlic and salt. Let simmer for 15 minutes. Using the set aside bouillon add flour to make a slurry. Mix into rest. Finally add sour cream. Serve over egg noodles or rice. Enjoy!

    (this is a favorite in my house and so easy to make)

    Western Style Mac and Cheese
    1 7 1/4 oz box of Mac and Cheese
    1 pound of Hamburger (or turkey Burger)
    1 medium diced onion
    1 16 oz can of corn
    1 jar of tomato sauce

    Prepare the Mac and Cheese as directed. In a medium skillet combine beef, onion, salt and pepper. Once the Hamburger is browned, drain well. Once drained mix in the can of corn and tomato sauce. Serve hot.

  3. Baked zestylemon butter flounder w/ brown rice & steamed asparagus...

    INGREDIENTS
    3-4 thawed or fresh filets of fish (haddock, flounder)
    2 tablespoons of smart-balance olive oil butter, 1 lemon, juice squeezed, zest of 1 lemon, 1 tsp. fresh ground pepper, 2-4 tsp. oregano
    9-10 spears of fresh asparagus
    1cup of long grain brown rice (1/4 of red onion chopped into 1/2inch chunks, 1 tsp. garlic)

    TO PREPARE FISH
    Coate a glass baking dish with olive or canola oil, preheat oven to 325...Place fish in glas dish, pierce filets lightly with fork. Mix lemon and slightly melted butter together, pour evenly over fish, and add pepper, oregano and lightly grate zest of 1 lemon over fish. Loosely cover with foil, poking small holes throughout foil for steam. Place in oven, and bake for 20-25 minutes or until fish is white in color and is slightly browned around edges (not to be mistakened with burned!! :)!)

    TO PREPARE RICE...
    follow packaged directions (for a quick cheat you can use steam in bag rice), but if you have time, prepare rice and after it is cooked, add in chopped onion and pinch of garlic.

    TO PREPARE ASPARAGUS
    In a saute or small pan, coate with olive or canola oil...cook over low to medium heat. Add in asparagus, and put lid on to steam...turn asparagus spears so they don't burn, and add a little bit of fresh ground pepper (i like the McCormick Grinders). Once Asparagus is tender, remove from heat, and serve immediately...so that it doesn't wilt and get soggy and cold.

  4. HOMEMADE MAC AND CHEESE

    For you moms out there, here is a quick and easy way to serve the classic Kraft Mac-n-Cheese without the boxed preservatives and sodium content...

    100% Whole durum wheat noodle (or a personal favorite is DeBoles Organic and All Natural Pasta- Rice Spirals)...cook according to box...if you use gluten free noodles, which are very good, just make sure to rinse the noodles in cold water after draining so they don't get soggy)...
    Grate 2 cups of natural cheese...(I like Hillandale Farms which is a PA dairy), but any natural cheese (lowfat skim) etc. is good.

    Add grated cheese to noodles, stir well and serve right away! My kids eat this stuff up like it's candy! :)

  6. I know this isn't a beef recipe, but here's an interesting one with shrimp!

    Gnocchi al Anastasio

    1 package of normal potato gnocchi (located in the Italian section of the supermarket. whole wheat or sweet potato won't do. Works great with homemade potato gnocchi, if you've got the time!)
    Shrimp enough for two, unseasoned, precooked and peeled
    1 large zucchini
    1 clove of garlic
    White wine
    Fresh cream
    Olive Oil
    Freshly ground sea salt and black pepper
    FRESHLY ground parmigiano cheese

    Begin by heating some oil in a frying pan. Rudely chop garlic and add. Lightly fry. Wash the zucchini and grate with a cheese grater (not on the fine setting). Add zucchini to the pan and fry for a minute, then add wine. Simmer on medium heat for a few minutes, then add (thawed) shrimp. Add more wine if necessary. Simmer on medium heat for a few minutes, then add cream enough so that it's not quite soupy. Simmer on low.

    Bring a pot of water to boil. Once it's boiling rapidly add some salt then the gnocchi. Stir lightly with a wooden spoon. Following package instructions, they should only need to be cooked for 3-4 minutes. When cooked, take off of the heat and with a slotted spoon, carefully spoon the gnocchi out of the pot and add to the shrimp/zucchini/cream mixture. Carefully stir with a wooden spoon to ensure all of the gnocchi are covered. If it's too soupy, let sit covered for a few minutes; the gnocchi will absorb excess cream. Salt and pepper to taste. Serve and sprinkle with grated parmigiano cheese, if desired.

    Works really well with scallops, too, but just start the process by lightly frying them to ensure they're fully cooked.

  7. Here's an easy one for Hamburg BBQ
    1/2 tsp salt
    1 T mustard
    1 T Worchestershire sauce
    1 cup ketchup
    chopped onion

    Add all these ingredients to the cooked hamburg or turkey burger and mix. You can double the recipe if you like it juicy or if you have more meat.

  8. Pretzel crusted chicken with cheese sauce
    4 small chicken breasts
    5 oz pretzels
    2 tbs butter
    oil for frying
    2 1/2 cups cheddar cheese
    1/4 cup parsley
    1 tbs thyme
    2 eggs
    2 tbs flour
    2 cup milk 1 tbs spicy mustard
    1/2 small onion, chopped.

    Put chicken in ziploc bag and beat with pot to flatten. Crush pretzels. Heat pan with 1/4" of oil. Add thyme to pretzels and dip chiken in egg then pretzels to coat. Fry for 3-5 minutes over medium heat until brown. While frying chicken, in sauce pan over medium heat, melt butter, add flour. cook 1 min. then add milk and whisk. When milk comes to a boil, stir in cheese and mustard. Add salt and pepper. Remove from heat. Place chicken on plate. Pour sauce over and sprinkle with parsley and onion.

    *If you don't want to make your own cheese sauce you can just put cheese whiz on top.
