Peanut Butter Oreo Truffles

You'll Need:
One package of peanut butter filled Oreos
1 and 1/4 cup peanut butter
1 bag of milk chocolate chips
2 tbsp veg oil

Directions:
CRush oreos into a powder or fine crumb using a food processor. Mix in peanut butter using a mixer. Roll the mixture into 1" balls. Melt the chocolate chips in the microwave, mix in vegetable oil and continue melting. ( I used 50% power and microwaved them in 15 second intervals to avoid burning). Roll balls in the melted chocolate. Place on waxed paper or cookie sheet to cool. Enjoy!

Baked Ham and Cheese Sandiwches

You'll Need:
2 packs of small dinner rolls
2 sticks butter
4 tbsp brown sugar
4 tbsp grey poupon mustard
2 tbsp worcestershire sauce
2 tbsp poppy seeds
1/2 lb ham
1/2 lb swiss cheese

Directions:
Melt butter. Add sugar, mustard, w sauce, and poppy seeds. Stir until well combined. Assemble sandiwches with rolls, ham, and cheese. Pour sauce over top and bake at 350 for 20 minutes.

Cream of Crab (Brian M. style)

You'll Need:
1 onion finely chopped
1/4 cup minced celery
1 tsp chopped parsley
1/4 tsp celery salt
1/2 tsp old bay
3 tbsp butter
1/3 cup flour
1 can chicken broth
1 lb crab meat
2 cups half and half
3 cups milk
dash of salt and pepper

Directions:
Saute onion and celery in butter. Mix flour with chicken broth and add to onions and celery. Add salt, pepper, old bay, and parsley. Add milk and cream and cook slowly until thickened. DO NOT BOIL. Put crabmeat in last just to warm.
Yields 10-12 cups.

Mini Meatloafs

You'll Need:
1 lb ground beef or ground turkey
1 tsp oregano
1/2 tsp salt
1/2 tsp worcestershire sauce
1 tbsp ketchup
3 Tbsp diced onion
1 egg
1/2 cup bread crumbs
1 cup cheddar cheese
1/2 cup spaghetti sauce

Combine all ingredients ( except cheese and spaghetti sauce) in a bowl and mix well. Place by spoonful into muffin cups. Make a small hole in the center of each meatloaf. Place cheese inside. Top with spaghetti sauce. Bake at 350 for 25 minutes.

Pumpkin Pie

(Makes 2 pies)

YOu'll need:
3 cups fresh cooked pumpkin
4 eggs
3 tbsp flour
1.5 cups sugar (I use brown sugar for half of this amount)
1.5 tsp vanilla
2 cans evaporated milk

Directions:
Put all in blender (except milk) and blend until well mixed. Then, add in milk. Pour into pie shells and sprinkle with cinnamon. Bake at 375 for about 45-50 minutes.

Cranberry Relish

You'll Need:
1 lb fresh cranberries crushed or minced
2 packages black cherry Jello
1 medium orange peeled and seeded (all white must be removed)
1 cup sugar

Using a food processor, crush fresh cranberries until fine. Add 1 cup of sugar and mix well and set aside for 30 minutes. Crush orange and add into cranberry mixture. Mix black cherry Jello using ONLY 1 cup of hot water per package and no cold water. Add to orange mixture. Mix all ingredients together and place in mold or serving dish.
Allow to stand in refrigerator overnight.

Mashed Potatoes

You'll Need:
6-8 russet potatoes, peeled and cut into same size pieces
10 cups water
1 tbsp salt
4 tbsp butter (softened)
1 cup milk (left at room temperature)

Directions:
After peeling potatoes be sure to cut them into same size pieces. Add into water and boil until potatoes are soft when checked with a fork. Drain water. Use an electric mixer and add in butter and salt. Mix on medium speed for 1-2 minutes. Add in milk slowly at low speed for an additional minute.

Traditional Stuffing

You'll Need:
1 cup diced onion
1 cup diced celery
1 tsp salt
1 tsp pepper
2 eggs
1/2 cup chicken broth
8 cups bread cubes (I like using potato bread and tearing it myself)
1 tsp parsley
1 tsp thyme (optional)
1 tsp rosemary (optional)

Directions:
Mix together onion, celery, salt, pepper, bread cubes, and seasonings in a large bowl. Add in beaten eggs. Mix well. Add in chicken broth. Mix well. Place in a greased baking pan and bake at 350 degrees for 40-50 minutes.

Honey Orange Glaze

2 tbsp. melted butter
2 tbsp. orange juice
2 tbsp. honey

Mix together in a bowl and pour over meat.

Baked Corn

You;ll Need:
1 1b bag of frozen corn
3 Tbsp butter
3 Tbsp flour
2 cup milk
1 tsp salt
3 Tbsp sugar
3 eggs

Directions:
Melt butter in a saucepan. Stir in the flour gradually and then add milk. Stir and heat to boiling point. Add corn, salt, and sugar. Heat well. Remove from heat and add beaten eggs. Pour into greased baking dish. Bake at 375 for 40-45 minutes.

Crab Cakes

You'll Need:
1 egg
1/4 cup Ranch dressing
2 (6oz) cans crab meat
20 Ritz crackers - crushed
1/3 cup parmesan cheese
2 green onions
1/4 tsp red pepper

directions:
Preheat oven to 375. Beat egg and dressing together. Add crab. Stir in remaining ingredients. Shape into 24 small cakes. Bake 5-7 minutes each.

Cream of Crab Soup

You'll Need:
1/3 cup diced bacon
2 tbsp butter
1 cup chopped celery
3 cup sweet corn
4 cups chicken broth
1/4 cup white cornmeal
1 onion
1 jalapeno pepper
1 red pepper (bell)
4 chicken boullion cubes
1 lb jumbo lump crab meat
1 cup whipping cream
1/2 cup chopped parsley
dash salt
dash of pepper

Directions:
Cook bacon and remove from pan. Melt butter and saute celery, corn, and onion. Add in chicken broth and other ingredients. Last add in whipping cream. Simmer on low for 30 minutes before serving.

Parmesan Chicken

Thanks to Mrs. Tyson from my church for sharing this recipe. YUM!
You'll Need:
1/2 cup Ritz crackers, crumbled
1/2 cup saltines, crumbled
1/3 cup parmesan cheese
1/2 cup melted butter
4 skinless, boneless chicken breasts chopped
1 can cream of chicken soup
1 cup milk
8 oz sour cream

Directions:
Combine cracker crumbs and cheese in a bowl and mix well. Place butter in another small bowl. Dip chicken in butter and then roll in cracker mix. PLace chicken in a baking dish and bake at 350 for 30 minutes or until golden. Mix soup, milk, and sour cream in a bowl and pour over chicken. Bake 15 minutes longer. Served over cooked spaghetti noodles is delicious!

Orange Pork Chops

You'll need:
6 pork chops (1/2 inch thick)
1 tbsp veg oil
3/4 cup water
1/2 tsp paprika
sprinkle of black pepper
1 medium orange
1/4 tsp salt
1/2 cup sugar
1 tbsp cornstarch
1/2 tsp ground cinnamon
1 cup orange juice (i prefer simply orange)

Directions:
Brown chops in oil on both sides. Add water, paprika, pepper and salt. Simmer for 30 minutes - turning once. In a saucepan combine: grated orange peel, sugar, cornstarch, cinnamon, Stir in orange juice. Cook and stir until thick. Top chops with sauce and then orange slices! Enjoy

Crock POt PIzza

You'll Need:
1 package egg noodles
1 lb ground beef
1/4 cup chopped onion
1 jar spaghetti sauce
1 can sliced mushrooms (drained)
1/4 teaspoon oregano
1/4 tsp basil
1/4 tsp minced garlic
1 package sliced pepperoni halved
3 cups shredded mozzarella cheese
3 cups shredded cheddar cheese

Directions:
Cook noodles according to package and drain. Cook beef and onion and drain. Into the meat stir the spaghetti sauce, mushrooms, seasonings. Spray crock pot with non stick spray. Spread a third of the beef mix into the bottom. Top with a third of noodles and pepperoni. Then sprinkle with a third of the cheese. Repeat 2 times. Cook on low for 6 hours.

Meatball Soup

You'll Need:
2 Tbsp extra virgin olive oil
2 carrots chopped fine
2 celery stalks chopped fine
1 medium onion chopped fine
1 tbsp salt
1 tsp pepper
1 lb ground beef
1 egg
1 tsp minced garlic
1/2 cup grated parmesean cheese
1/2 cup bread crumbs
6 cups chicken broth
2 cups water


Directions:
In a large pot heat oil and saute carrots, celery, and onion for 5-6 minutes. Add in salt and pepper. IN a bowl combine beef, egg, garlic, bread crumbs, and cheese. Form mixture into miniature meatballs. Add broth and water to the pot. Heat on high to a boil. Add in meatballs gently and slowly. Let simmer for about 20 minutes. (You can add in small pasta noodles or rice too if you'd like.)

Chicken Prosciutto

You'll Need:
1 pound boneless, skinless chicken breasts
1/4 pound prosciutto sliced thin
1/4 cup cream cheese (garlic and chive flavored)
1 cup balsamic vinegar

Directions:

Place chicken breasts in the bottom of a baking dish. Spread a dallop of cream cheese on each. Wrap a slice of prosciutto around each breast, seam side down. Pour balsamic vinegar over top. Bake uncovered at 350 for 30-35 minutes.

Tater Tot Casserole

You'll Need:
1 pound browned ground beef
1/2 cup chopped onion
1 (16 oz) package of frozen tater tots
i can cream of mushroom soup
2/3 cup milk
2 cups shredded cheddar cheese
1 cup frozen corn

Directions:
Brown beef in a skillet. Saute onions in with meat until tender. Pour into baking dish. On top of beef mixture place the tater tots. Then place the corn next. Combine soup and milk and pour over top. Sprinkle cheese on top. Bake uncovered for 30 minutes at 350 degrees.

Stuffed Shells

You'll Need:
I container ricotta cheese (16 oz)
2 tbsp parsley
1 egg
2 cups shredded mozzarella
1 cup grated parmasean
1/4 tsp salt
1 tsp oregano
1 tsp basil
1 tsp minced garlic
1 jar spaghetti sauce
1 box shells for stuffing

Directions:
In a pot cook the shells according to the package directions. Drain and let cool. In a bowl
combine all cheeses, egg, and spices. (Set aside sauce). Mix well. Stuff shells with this mixture. In a baking dish spoon about 4-5 Tbsp of sauce. Layer shells on top. Top with remaining sauce and then a few tbsp of parmesean and mozzerella cheese. Bake at 350 for 30 minutes.

Barbeque Chicken Casserole

You'll Need:
1 cup flour
1 broiler/fryer chicken cut into pieces (or I also like to use boneless, skinless)
2 tbsp canola oil
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 cup ketchup
1/2 cup water
3 tbsp brown sugar
3 tbsp worcestershire sauce
1/4 tsp salt and 1/4 tsp pepper
2 cups frozen corn

Directions:
Coat chicken pieces in flour. Brown the chicken in hot oil and place into a baking dish. Saute onion, pepper, and celery. In a small bowl combine other ingredients (except corn) and then add in onion, pepper, celery. Heat on high until boiling. Boil a few minutes until well combined. Pour ovr chicken and bake for 30 min at 350. Pour corn over top and bake an additional 20 minutes. I also like to top with some cheddar cheese.

Citrus Grilled Salmon

YOu'll Need:
4 Salmon Filets (about 3-4 oz each)
4 slices of lemon
4 slices of orange
1/8 tsp salt
1/8 tsp pepper
2 tbsp white wine

Directions:
Preheat oven to 375 degrees. Lay fish in a baking pan. Coat with mix of salt and pepper. Alternate orange and lemon slices on top of fish. Sprinkle with white wine. Cook for about 10 minutes.

Crock Pot Chili

You'll Need
:1 lb. ground beef
2 onions, chopped
4 cloves garlic, chopped
2 (14 oz.) cans diced tomatoes, undrained
15 oz. can tomato sauce
1 Tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. salt
1/8 teaspoon pepper
1/4 teaspoon cayenne pepper
2 (15 oz.) cans red kidney beans, rinsed and drained
2 Tbsp. cornstarch
1/4 cup water

Cook and drain beef. Add remaining ingredients to crock pot and set to cook on medium for 4-6 hours.

Chicken Cordon Bleu

You'll Need:
1 lb boneless, skinless, chicken breast
1/2 lb deli sliced ham
4 thin slices of velveeta cheese (or other good melting cheese)
1 cup panko bread crumbs
1 egg
1/2 cup milk
1 cup flour
1/2 tbsp salt
1 tsp pepper
1.5 cups vegetable oil

Directions:
Flatten chicken breast with a rolling pin or meat tenderizer until very thin. Lay flat and layer ham and cheese on top. Roll into an egg shape. Wrap in saran wrap and place in the fridge for 30 minutes. In one small bowl place the flour. IN a nother bowl mix the egg and milk. In a third bowl place the panko crumbs, salt, and pepper. After 30 min. place each chicken breast in the flour, then into egg mix, and lastly coat with bread crumbs. Fry lightly on top of the stove in vegetable oil. Then, place in a roasting pan and bake in the oven for 25-30 min at 350 degrees.

Fish Packets

You'll Need:
1 lb (more or less to suit your family's needs) white fish (haddock, cod, etc...)
1/2 cup sweet corn
1/4 cup diced tomatoes
1/4 cup diced peppers
2 tbsp lemon juice
1/8 tsp salt
1/8 tsp pepper
foil

Directions:
Unroll a large piece of foil and lay out 2 large fish filets in the foil. In a small bowl combine the corn, tomatoes, peppers, lemon juice, salt, and pepper. Spoon the mixture on top of the fish. Fold foil over and grill for 15-20 minutes on low/med heat. Enjoy!

baked apples

You'll Need:
2 granny smith apples, cored and peeled, diced into 1/2 inch pieces
1 cup brown sugar
1 stick butter
1/4 cup flour

Combine and thoroughly mix together all ingredients. Bake in a pan at 350 degrees for 30 minutes.

Swedish Meatballs with sour cream sauce

You'll Need:

For meatballs:
1 lb ground beef
1 small onion finely chopped
1 egg yolk
1/4 tsp salt
1/8 tsp ground pepper
1 tsp oregano
1 tsp basil
1 cup bread crumbs

For sauce:
1 can undiluted cream of mushroom soup
1/2 pint sour cream

Directions:
Combine all meatball ingredients in a bowl. Form into 1 inch round balls. Bake at 350 degrees for 20 minutes. Combine sauce ingredients in a pan on top of stove. Simmer for 10 minutes. I like to serve mine over egg noodles.

Eggplant Parmesan

You'll Need:
1 medium eggplant, washed and cut into 1/2 inch round slices
1 egg
1/2 cup milk
1 cup flour
1 cup panko bread crumbs
1/4 cup grated parm. cheese
1/4 tsp salt
1/4 tsp oregano
1 can spaghetti sauce
2 cups peanut oil or other cooking oil
1 box thin spaghetti noodles (or your favorite pasta)

Directions:
After slicing the eggplant into 1/2 inch rounds toss in flour. In a medium bowl scramble the egg and add milk to it. Mix. In a separate bowl mix the bread crumbs, parm cheese, oregano, salt. Dip rounds in the egg mixture, then coat with the bread crumb mixture. Pan fry in the oil on low setting until lightly browned. In a separate pan heat water to boiling and cook pasta according to package. Drain. Layer eggplant slices on top of pasta once fried and top with heated spaghetti sauce.

Crab Cakes

You'll Need:
(1) 12 oz can crab meat (I like to use jumbo lump)
1/4 cup ranch dressing
20 ritz or club crackers ground in food processor
1/3 cup grated parmesean cheese
1 small onion finely chopped
1/4 tsp cayenne pepper
1/4 tsp salt

Mix together and form into 4 oz patties. Bake in the oven for 7-10 minutes at 375 degrees.

Homemade Chicken Salad

You'll Need:
1 lb cooked boneless, skinless chicken salad diced into small pieces
1 cup mayo
2 tbsp yello mustard
2 tbsp pickle relish
1 small onion diced fine
1 tsp salt
1/4 tsp ground pepper

Mix together and serve on rolls.

Enchilada Lasagna

Taken from Taste of Home magazine - August 2010

You'll Need:
1.5 lbs ground beef
1 medium onion chopped
1 minced garlic clove
1 can stewed tomatoes
1 can enchilada sauce
1 tsp ground cumin
1 egg beaten
1.5 cups cottage cheese
3 cups shredded mexican cheese
8 flour tortillas
1 cup shredded cheddar cheese

Directions:
In a large skillet, cook the beef, onion, and garlic. Drain. Stir in the tomatoes, enchilada sauce, and cumin. Bring to a boil. Simmer for 20 minutes. In a small bowl combine egg and cottage cheese. Set aside. Spread 1/3 of meat on bottom of 9x13 baking dish. Layer with haf of the cheese blend, then tortillas, then cottage cheese mixture, then meat sauce. Repeat and sprinkle with cheddar cheese. Cover nad bake for 20 min at 350 degrees. Bake an additonal 10 min uncovered. Serve and enjoy.

Zuchini and Blueberry Bread

You will need:
1.5 cups flour
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1 beaten egg
1 cup sugar
1 cup finely shredded zuchini
1/4 cup cooking oil
1 cup blueberries

Grease loaf pan. Preheat oven to 350 degrees. In a mediumbowl combine: flour, cinnamon, baking soda, baking powder. In another bowl combine egg, sugar, zuchini, blueberries, and oil. Add wet mix to the dry mix. Stir. Pour into loaf pan. Bake at 350 for 50 minutes.

Sweet Potato Casserole

You will need:
3 cups cooked, mashed sweet potatoes
1 cup sugar
2 eggs beaten
1 tsp vanilla
1/2 cup butter
1/3 cup milk

Mix all of the above and place in a baking dish.

For topping you will need:
1 cup brown sugar
1 cup chopped pecans (or walnuts)
1/3 cup butter
1/2 cup flour

Mix well and place on top.

Bake at 350 degrees for 30 minutes.

Lasagna

You'll Need:
1 lb ground beef browned
1 jar (44oz) spaghetti sauce (I like to use one with lots of herbs!) (reserve 1 cup)
2 cups ricotta cheese
2 cups mozarella cheese (reserve 1/2 cup)
1 cup grated parmesean cheese
1 tbsp fresh parsley
1 tbsp fresh oregano
1 tbsp fresh basil
1/4 tsp salt
1 cup grated zuchini or chopped spinach
1 egg
i package cooked and drained and cooled lasagna noodles

Directions:
Mix together all cheeses, herbs, and egg in 1 bowl. Mix together the ground beef and sauce in another bowl. Stir in zuchini to this bowl. Layer in a 9x13 baking dish the following: 1 layer of noodles, spread cheese mixture over top, then spoon meat mixture on top, layer again with noodles, cheese, and meat mixture. THen top with reserved sauce and then reserved cheese. Bake at 350 degrees for 1 hour or until bubbling.

Coleslaw

You'll Need:
1 bag of pre-packaged coleslaw mix
1 cup mayo
1 cup white sugar
1/4 cup white vinegar

Mix all of the above together and serve chilled.

Sweet Glazed Carrots

You'll Need:
8 medium carrots cut into strips
1/2 cup catalina dressing
2 tbsp brown sugar
2 tbsp worcestershire sauce
2 tbsp parsley

Directions:
Cook carrots in boiling water until crisp and tender. Return to saucepan Add dressing, sugar and sauce and cook for additional 10 min. Toss with parsley.

Chicken Skewers with peanut sauce

You'll Need:
1/4 cup Catalina dressing
3 tbsp peanut butter
1 tbsp soy sauce
1 lb boneless, skinless chicken breast cut into strips
1/4 cup chopped green onions

Directions:
Mix dressing, peanut butter, and sot sauce until smooth (use blender for best results). Add chicken and toss to coat. Refrigerate 10 minutes to marinate. thread chicken onto skewers. Broil 4 min on each side. Sprinkle with onions.

Chicken Cacciatore

2 lbs chicken cut into pieces
4 cups tomatoes
1 green bell pepper
2 small chopped onions
2 garlic cloves minced
1 bay leaf
1 tsp salt
1 tbsp oregano
1 tbsp basil
1/4 tsp pepper
1/4 cup white wine
1 cup mushrooms chopped

Combine above in a slow cooker for 6-8 hours on low/med. heat.

Cheeseburger Potato Soup

You'll Need:

2 tbsp butter
1/2 cup chopped onion
2 cups chicken broth
3 cups diced potatoes
1/2 tsp salt
1/4 tsp pepper
1/4 cup chopped celery
1/2 cup diced carrots
1/8 tsp celery salt
1/8 tsp paprika

2 cups milk
3 tbsp flour
1 cup shredded sharp cheese
Add 3/4 -1 cup cooked ground beef

Directions:
Melt butter in lg saucepan. Add onion and saute until translucent. Add the next 8 ingredients and cook about 20 min. until tender. Mix milk and flour until smooth. Add to soup and cook until thickened, stirring constantly. Add in cheese and burger.

Strawberry Orange Croissant Casserole

You'll Need:
6 medium croissants, halved lengthwise
1 package of cream cheese softened
1 cup fresh or frozen strawberries
8 eggs
1/2 cup sugar
1 cup half and half
1 tsp nutmeg
1 tsp almond extract
1/2 cup orange marmalade
1/4 cup orange juice

Grease a 9x13 inch baking pan. Spread croissant halves with cream cheese. Arrange some of the strawberries o top of each croissant bottom then sandwich together with croissant tops. Put croissants in baking dish. IN a medium bowl beat eggs. Add sugar, half and half, nutmeg, and almond extract. MIx well and pour over croissants. In a small bowl mix marmalade and orange juice. Spoon over croissants. Cover and refrigerate overnight. the next morning preheat oven to 350 degrees and bake for 40 minutes.

Taco Bake

You'll Need:
1 lb ground beef (browned)
1 can tomato soup
1 cup salsa
1/2 cup milk
6 flour tortillas (cut into strips)
1 cup shredded cheddar

Directions:ake
MIx all ingredients together. Put into a medium sized casserole dish. Cover and bake at 400 degrees for 30 minutes.

Shrimp Burgers

You'll Need:
1 1/4 lb medium shrimp (raw)
1 large egg
1 tbsp mayo
2 tsp lemon juice
1/2 tsp salt
1/8 tsp cayenne papper
3 Tbsp finely chopped celery
2 Tbsp green onion
1 Tbsp parsley
1 1/4 cup townhouse crackers crushed
4 kaiser rolls

Directions:
Peel shrimp and cut into 3rds. Line a large cookie sheet with foil and coat with cooking spray. Stir together the egg and the next 4 ingredients. Stir in celery, onion, parsley. Fold in shrimp and crushed crackers. Shape into 4 cakes. Place patties on cookie sheet and cover and chill for 1-2 hours. Then, freeze cakes for 30 minutes before grilling. Preheat grill to 350 -400 degrees. Cook covered 5 minutes on each side. Grill rolls.

YOu can top with sweet and tangy sauce:
Mix together 1 cup mayo, 2 Tbsp parsley, 2 Tbsp horseradish, 1 1/2 tsp cajun seasoning, 1 1/2 tsp lemon juice, 1/4 tsp paprika.

Bourbon Chicken

From my sister in laws kitchen...
YOu'll need:
1-2 lb Boneless, Skinless Chicken Breast cubed
1-2 Tbsp olive oil
1 garlic clove, crushed
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 Tbsp ketchup
1 Tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce

Directions:
Heat oil in large skillet. Add chcken pieces and cook until lightly brown then remove. Add remaining ingredients to pan and heat over medium heat until well mixed. Add chicken and bring to a boil. Reduce heat and simmer for 20 minutes. Serve over hot rice.
*adding a slurry of cornstarch and water thickens the sauce. I do usually do this.

Baked Chicken Pie

You'll Need:
1 pkg (10 oz) frozen peas and corn
1 chopped up carrot
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
1 3/4 cups chicken broth
2/3 cup milk
2 1/2 cups chopped up cooked chicken
Two pie crusts
1 cup, cooked and diced potatoes

Directions:
Melt butter in saucepan over medium heat. Stir in flour, onion, salt, and pepper. Cook, stirring constantly. Remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Stir in chicken and veggies. Remove from heat. Heat oven to 425. Pour
chicken mixture into pastry lined pan. Roll remaining pastry on top. Bake about 40 minutes.

Skillet Lasagna

You'll Need:

1 lb ground beef cooked and drained
1 jar spaghetti sauce
1 small container ricotta cheese (16 oz)
2 cups mozzarella cheese
1 tsp salt
1 small chopped onion
1/2 cup grated parmesan cheese
4 cups cooked and drained rotini or other small pasta noodle.

Combine all ingredients in a large skillet. Simmer on low for 10-15 minutes.

Shepherd's Pie

You'll Need:

1 pound cooked ground beef
2 cups hot cooked mashed potatoes
1 cup shredded cheddar
2 cups frozen corn (or use whatever veggie your family prefers)
1/2 cup barbeque sauce

Directions:
Brown beef and drain. Toss in BBQ sauce. Layer in the bottom of a casserole dish. Top with corn or other frozen veggie. Top with mashed potatoes and smooth with spoon. Top with cheese. Bake at 375 for 30 minutes.

Chicken Tortilla Soup

You'll Need:

2-3 boneless, skinless chicken breasts
2 cup chicken broth
1 package taco seasoning
1 package dry ranch dressing seasoning
1 can corn
1 can diced tomatoes
1 can Ro-tel tomatoes
1 can kidney beans
1 can Pinto beans
1 cup sour cream
2 cups cheddar cheese

Combine all ingredients in a crock pot (except the sour cream and cheese) and set on low setting for 6-8 hours. When serving top with sour cream and cheese.

Fettucini Alfredo

You'll Need:

8 oz fettucini (uncooked)
1 1/4 cup chicken broth
4 tsp flour
1/3 cup cream cheese
3 Tbsp grated parmesan cheese
1/8 tsp nutmeg
2 tbsp parsley

Directions:
Cook pasta. Combine broth and flour in saucepan to create a rue. Stir in cream cheese. Cook a few minutes, stirring constantly until mixture boils and thickens. Toss pasta with sauce. Add parmesan cheese and nutmeg and stir. Sprinkle with parsley and serve.

Ramen Noodle Salad

You'll Need:

16 oz cole slaw
1 cup slivered almonds
1 cup sunflower seeds
2 packages of beef flavored ramen noodles
3/4 cup veggie oil
1/2 cup sugar
1/3 cup white vinegar
2 packets of beef flavoring from ramen noodles

Directions:
Toss together coleslaw, almonds, sunflower seeds, and crushed up packages of ramen noodles.
Combine veggie oil, sugar, vinegar, and seasoning in a smaller bowl. Pour over salad and let sit for 15 min before serving.

Pumpkin and Cream Cheese muffins

You'll Need:

1 pkg of cake mix (i used yellow, but you could use spice or another kind...)
1 pkg instant vanilla pudding
1 cup canned or 1.5 cups fresh pumpkin
1 pkg (8oz) softened cream cheese
1/4 cup sugar
1 egg

Directions:
Prepare cake mix as stated on package. Add dry pudding mix and pumpkin. Stir well. Spoon into 24 cupcake liners. Beat cream cheese until creamy. Beat in sugar and egg. Spoon over batter and then swirl gently with a toothpick. Bake at 350 for 18-21 min. Let cool.

Strawberry Shortcake (Sugar Cake style)

You'll need:
1.5 cups flour
1 cup sugar
1/2 cup melted butter
2 eggs beaten
1.5 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/2 cup milk

Directions:
Grease 8x10 pan. Heat oven to 350. Mix flour, baking powder, and salt in a bowl. Melt butter and add butter to sugar and stir. Add in eggs. Add vanilla, and milk. Add in flour mix. Stir together. Pour into pan and bake at 350 for 35 min. Serve with sliced strawberries and whipped cream.

Stuffed Pepppers

You'll Need:
1 small onion chopped
1 lb ground beef
1/2 cup cooked white rice
1 jar spaghetti sauce
1/4 tsp salt
1/4 tsp pepper
1/2 tsp oregano
1/2 tsp minced garlic
1/4 cup cheddar cheese (shredded)

Directions:
Mix together in a large bowl all of the above ingredients, except the cheese and sauce. Pat into 4 pepper halves. Top with sauce and then cheese. Bake in oven at 375 for 45-60 minutes.

Pasta Primavera

You'll Need:
1 zuchini diced
1 yellow squash diced
1 can of diced tomatoes
1 small onion diced
3 cups cooked linguini (or other pasta)
1 cup italian dressing

Directions:
Cook pasta according to package. Put all other ingredients in a large skillet and saute on med heat for 5-7 minutes. Add in pasta. Serve.

Homemade Mac n Cheese

Ingredients:
2 cups elbow macaroni
2 cup milk
1/4 cup butter
1/4 cup flour
2 cup cubed sharp cheddar cheese
1/4 tsp worchestershire sauce
1/2 tsp salt
1/4 tsp pepper
1/4 tsp dry mustard
2 cups breadcrumbs

Directions:
Cook macaroni according to package. Melt butter in saucepan. Add salt, pepper, mustard, W. sauce. Add flour until well blended. Add milk and bring to a boil. Stir constantly. Once boiling, stir for 1 min. Reduce heat and add in cheese. Allow cheese to melt. Drain macaroni and put in baking dish. Pour cheese mix over top. Add breadcrumbs and bake at 350 for 20-25 min.

Sweet and Sour Meatball Simmer

You'll need:
3/4 lb frozen meatballs (or make your own)
1 red pepper (cut into chunks)
1 yellow pepper (cut into chunks)
1/4 cup water
1/4 cup apricot jam
1/4 cup Catalina dressing
2 tbsp soy sauce
3/4 tsp ground ginger
3/4 tsp garlic powder
2 cups white rice prepared according to package

Directions:
Combine all above ingredients except rice in a skillet. Cook on medium heat, covered for 10 minutes. Stir every few minutes. Increase heat to med-high and uncover skillet. Cook 8-10 min. Serve over hot rice.

Baked Ziti

You'll Need:
1 pkg. ziti pasta
1 jar spaghetti sauce
1 15oz container ricotta cheese
2 cups mozarella cheese (divided)
1 cup grated parmesan cheese

Directions:
Preheat oven to 350 degrees. Cook pasta al dente and drain. Mix spaghetti sauce and ricotta in a large bowl. Add pasta and 1 cup of the mozerella cheese. Mix and spoon into baking dish. Top with remaining cheeses. Bake at 350 for 30 minutes.

Cheesey Taters

You'll Need:
1 bag Southern Style Frozen Hashbrowns
1 Medium sized sweet onion, chopped
1 stick melted butter
1 can cream of celery soup
1 can cream of chicken soup
1 pint sour cream
4 cups shredded cheddar cheese (1/2 cup reserved)
1 tsp. salt

Directions:
Mix all of the above ingredients well in a large mixing bowl. Spread into a large, shallow baking pan. Top with reserved cheese. Bake at 350 degrees for 1 hour.

Shrimp Scampi

You'll Need:
10-15 Large Shrimp

Marinade:
1 Tbsp salt
1 Tbsp pepper
3 Tbsp white wine
3 Tbsp olive oil

Topping:
1 stick butter
4 garlic cloves
3 Tbsp parsley
1 tsp rosemary
1 tsp red pepper flakes
2 Tbsp lemon juice
1 egg yolk
2/3 cup Panko bread crumbs

Thaw shrimp and mix together ingredients in marinade. Let shrimp marinate in marinade for at least 30 minutes. Place Shrimp in a shallow baking pan. Melt butter and add topping ingredients in with butter. Mix. Crumble on top of shrimp. Bake at 425 degrees for 20 min.

Chicken Pot Pie

This is my great grandmother's recipe!!! And it is delicious!

In a large stock up cook off 1 whole chicken in 6-8 cups of chicken broth.

Meanwhile, mix together 2 1/2 cups flour, 3 eggs beaten, 1/2 cup milk. Mix into a dough. Chill for 30 min. Roll out very thin and cut into pieces. Once chicken is cooked drain bones and dice chicken. Add chicken back into stock and boil on high. Add dough pieces 1 by 1, stirring every few minutes. Add chopped carrot, tbsp salt, tsp ground pepper, 2 cups diced potatoes, and 1 cup diced celery. Boil for at least 45 min. Serve and enjoy.

Chicken Enchiladas

Thanks to a friend for sharing this recipe...

2 large chicken breasts cooked and cut up
Tortilla shells
3-4 cups grated cheddar cheese
1 can creme of chicken soup
1 medium onion cut up
1 can evaporated milk

Butter well a 9x13 casserole dish. Cook chicken and cut up into small pieces. In a skillet saute the until until tender. Slowly add the creme soup and evaporated milk and chicken. Cook over low heat for 5 min. Remove from heat. Place a small amount of above mixture in the bottom of dish. Lay enough tortilla shells to cover that. Add more chicken mixture on top of shells til covered. Sprinkle grated cheese on top. Add another layer of shells, chicken mix, and cheese. Bake uncovered 30-40 minutes at 400.

Chicken Spaghetti

You'll need:

1 lb cooked, shredded chicken
2 cups chicken broth
1 lb thin spaghetti
2 cans cream of mushroom soup
2.5 cups shredded cheddar cheese
1 small onion diced
1/4 cup diced bell pepper
1 jar diced pimentos (drained)
1 tsp salt
1/8 tsp cayenne pepper (optional)

Cook spaghetti until al dente. Place the cooked spaghetti in a large bowl. Add the cream of mushroom soup. Add the cheese (set 1/4 cup aside for topping). Add onion, green pepper, and pimiento. Add salt and cayenne pepper. Add the chicken and broth. Stir together. Pour into a large baking dish and top with remaining cheese. Bake 35-40 minutes.

Heat oven to 350 degrees.

Sloppy Joes

This recipe comes from a family friend.

You'll need:

2 pounds ground beef browned
2.5 cups ketchup
2.5 Tbsp yellow mustard
1/4 cup plus 2 Tbsp brown sugar
1 3/4 Tbsp cider vinegar

Mix all wet ingredients in a crock pot. Add meat. Cook on medium heat in crock pot for 4 hours min.

Beef Noodle Bowls

Im trying a new recipe this week because I had some coupons for Kraft dressing and some beef tips in the freezer... Here it is... You'll Need:

1/2 pound linguini.
3 cups broccoli florets
3 carrots (peeled and sliced)
2 tsp. oil
1 lb beef tips.
1/4 cp Kraft Asian Toasted Sesame DRessing
1 Tbsp. Teriyaki Sauce

Directions: Cook pasta in saucepan. Add vegetables to the boiling water for the last 2 minutes. Meanwhile, heat oil in a large non-stick skillet. Add meat, cook until browned. Stir in dressing and teriyaki sauce. Cook for a few minutes until thickened (or you can add a slight slurry of cornstarch and water). Toss together with all ingredients. Enjoy!

Chicken and Waffles

You'll Need:

For the waffles:
1 3/4 cup whole wheat flour
2 Tablespoons sugar
1 Tablespoon baking powder
2 eggs
1 3/4 cup milk
1/2 cup melted butter
1 teaspoon vanilla

For the chicken and gravy:
1 pound chicken cooked and cut into small pieces
32 oz chicken stock
1 tsp salt
1 tsp pepper
2 tbsp cornstarch
1/4 cup cold water

To make the waffles:
Mix together dry ingredients in one bowl. Lightly beat together wet ingredients in another. Add egg mixture to dry ingredients and stir just until moistened. Pour batter onto lightly-oiled waffle iron and bake until done. This makes about 6-8 waffles.

To make the gravy:
Boil chicken stock on stove top. Add in salt and pepper to taste and then using the corn starch and water make a slurry. Add into stock until desired consistency is achieved. Add in chicken. Let boil for 10min, stirring constantly. Serve over waffles.

Whole Wheat Pizza Crust

Here's a great recipe for Whole Wheat Pizza crust that my cousin Jenn shared with me. It's fabulous!

  • 2 cups of whole wheat flour
  • 1 package or 1 tablespoon of active dry yeast
  • 3/4 teaspoon salt
  • COMBINE ABOVE INGREDIENTS IN BOWL AND MIX
  • 1 cup warm water
  • 1 tablespoon Olive (or Canola) Oil
  • 1 teaspoon honey
  • ADD "wet" ingredients to bowl and mix (works best if you oil your hands and "mix" by hand, forming into a ball.
  • Cover bowl with a damp dishtowel and place in a warm spot for 10 MINUTES
  • Pre-heat over to 425 degrees
  • Remove from bowl and press onto a round pan and add any desired ingredients
  • Place in oven for 15-20 minutes. Baking time can vary depending on oven. (Mine took a little longer and so I pulled mine out at 15 minutes and cut into crust a bit to see if it was doughy and then since it was put back into oven for about 10 more minutes)
  • SERVE and ENJOY quick and delicious pizza!
To make this into veggie pizza use 1/2 package ranch dressing mix and combine with 1/2 cup sour cream and 1/2 cup cream cheese. Spread on crust. Then top with whatever veggies you like and sprinkle with cheese. Put back in oven for an additional 10 minutes. Enjoy!
